BOURBON & BROWN SUGAR: Our friends at Heritage soak oak chips in Elk Rider Bourbon exclusively for us, which we use to smoke this wild salmon fillet after packing it in brown sugar and a touch of Elk Rider Bourbon prior to entering the smoker. The result: a moist, flaky, delicious smoked salmon with beautiful color and a subtle touch of sweetness.
GARLIC LOVER'S OR WATERBROOK WINEMAKER'S: (Garlic Lover's): With garlic in the brine, a light brushing of garlic olive oil, and minced garlic (along with cracked black pepper) on top, this is every garlic lover’s dream come true. (Waterbrook Winemaker's): We worked with our friends at Waterbrook Winery of Walla Walla to create this special culinary celebration of our region. We brush the wild Alaskan Coho salmon with a glaze of Waterbrook wine, and smoke using vines and American Oak Chardonnay wine barrels from their vineyards.
BEERGARDEN: Brined in a locally-produced craft ale and topped with cracked black pepper for a hearty smokehouse flavor that’s perfect with a cold craft beer.
