Experience our Albacore Tuna, responsibly caught in the pristine waters of the Pacific Northwest. Albacore Tuna is known for its mild yet rich flavor and firm, steak-like texture. This superior tuna is not only a rich source of protein but also brimming with essential omega-3 fatty acids, making it a nutritious choice for any meal. Renowned as the lightest-colored tuna species, it delivers a perfect balance of taste and health benefits in every bite.

We like to prepare Albacore Steaks medium-rare on the grill. For extra flavor, marinate the steaks in olive oil, lemon juice, garlic and herbs.

Storing Your Tuna: Upon arrival, we recommend that you store your frozen tuna medallions at or below 0° F ( -18° C). Once you have stored your tuna, we recommend consuming it within 12 months.

Thawing Your Tuna: Time to thaw your tuna for enjoyment. Begin by puncturing or removing the packaging from the frozen portion. After this you will want to thaw under refrigeration at or below 38° F (3° C) overnight.

Cooking Your Tuna: While there are a couple of methods to cooking your wild albacore tuna medallions, we recommend the pan-searing method to get the best experience. 

Begin by coating the tuna with Olive Oil and season with Salt & Pepper. You will want to sear the tuna over medium high heat, approximately 1-3 minutes on each side to your desired taste. These rich and tender medallions are delicious when served rare. Take note - your tuna will continue to cook once you remove it from heat. You’ll know it is done when the meat flakes with a fork but remains pink in the center.
