"I’ve been eating lox from childhood on. We used to go to the deli where a side was sitting in the deli counter and we could buy it by the slice. We’d get three or four slices, then when we got home we mixed it with cream cheese so everyone could have a taste. As a young adult, I learned that you could actually buy more and pile it high on a bagel. It was a treat. Subsequently, I had Scottish and Norwegian lox shipped to me from a great NY deli. And, finally, I started having SeaBear lox shipped to me. SeaBear lox is the best I’ve ever had. I don’t know if the difference is that it’s from Pacific salmon rather than Atlantic, farmed, or North Sea salmon that makes part of the difference. But, I do know that the way in which salmon is made into lox has to play a big part in the finished product (lox). Additionally, when you place a side on a platter, it looks beautiful. So, when beauty and taste are each spectacular, nothing more need be said."
