"Magic" Grilled Wild Salmon

Ingredients

  • 1 or 1.5 LBS Wild Salmon Fillets with Skin On (We recommend our Fresh & Wild Salmon Sides)
  • 3 Tablespoons White Wine
  • Juice from 1 lime (or 1 lemon)
  • 1/4 Cup Olive Oil
  • Your Favorite Salmon Seasoning (We use Paul Prudhomme's MAGIC Salmon Seasoning, or Tom Douglas' Salmon Rub with Love)

Instructions

  1. Remove salmon from refrigerator a half hour before grilling
  2. Preheat grill to med/high
  3. Whisk together the white wine, lemon, and olive oil (this thickens the mixture.) Baste non-skin sides of salmon filets with oil mixture, and sprinkle generously with seasoning. Place basted side down on grill
  4. Grill 5-7 minutes (depending on thickness) in a covered grill. Open grill back up, baste and season skin side then turn filets over using 2 spatulas. Baste again using the remaining oil mixture and more seasoning to taste
  5. Cover and grill skin side down for another 5-7 minutes, or longer if needed.
