I haven’t tried them yet,
"I haven’t tried them yet, but I’m not happy that the so-called fillets do not look anything like fillets. They look like square cubes. I will not be buying any more halibut from you."
Your Wild Halibut Dinner Fillets will arrive to you frozen over dry ice. For storing, place in the freezer or refrigerator. These fillets will maintain their freshness for 3-4 months while frozen. Upon thawing, each should be prepared within 1-2 days.
To prepare, begin by thawing the fillets - we recommend removing from the pouch and thawing overnight for 8-10 hours in the refrigerator.
Once your fillets have thawed, we believe the key to the best experience is taking your time and going slow. Slow cooking will lock in more flavor and support the best texture. You’ll know your fillet is ready when it turns from translucent to nearly completely opaque. Here are our guidelines for baking and grilling:
Baking: Preheat the oven to 275°F. Brush a baking tray with olive oil and sea salt. Let bake for approximately 20 minutes. Do not flip fillet.
Grilling: Before heating up the grill, brush the grill and fillets with olive oil. Bring the grill to medium-hot and place the fillets on the grill. Season with salt and pepper. Grill until the sides become opaque and flip once until fully cooked. Flip once and continue grilling until fully cooked.

"The halibut was mild tasting and tender. It was easy to cook. I cooked it in the oven as per the included instructions of lower heat. I have bought these before and they don't disappoint. They arrived on time and still frozen."
"The halibut tastes great but instead of fillets we received cube chunks that were very difficult to properly cook and eat. Fillets should be fillets."
"The Halibut I ordered in 2025 was delicious. I will order from this company again. I researched recipes and used a cast iron skillet and kept it simple. The cost of halibut in a restaurant is now too expensive. This is the way to enjoy halibut at home. I called in my order and asked a few questions. Polite and friendly person!"
"Too thickly cut. I was disappointed When I thaw them to fix I will have to slice in halves to make thinner. I have never received halibut cut this way. For the money I paid they should have been filleted much better."
"It is difficult to find good halibut where I live. A friend recommended SeaBear to me over 10 years ago and I have been purchasing halibut from them ever since. The halibut is delicious and perfectly filleted. SeaBear includes the cooking instructions and they are perfect everytime! I highly recommend the halibut from SeaBear!!"
"We love the salmon and the halibut, the best fish so fresh tasting!"
"SeaBear always delivers top quality products. That coupled with excellent customer service makes it my only choice for seafood!"
"I cooked it in oven with preparation per your suggestion. My husband hated it. Did not like taste at all."
"Still learning how to cook Halibut. . . I think I over cook the halibut which dries it out. Still looking for recipes or suggestions. Thanks!"
