Storing Your SeaBear Wild Salmon  

Your wild salmon has been quick-frozen to lock in the flavor and nutrients, and shipped to you on dry ice. Upon arrival, please freeze or refrigerate. Fillets will keep in the freezer for approximately 3-4 months; once thawed they should be cooked and used within 1-2 days. Once a frozen fillet is completely thawed, it can be re-frozen though we do not recommend it, as taste and quality may begin to suffer. No fillet should be re-frozen if it has been thawed 2 days or longer. 

 

Thawing 

The best way to thaw your wild salmon is to leave it in the refrigerator overnight (in its pouch), allowing at least 8-10 hours. Trying to rush the process by thawing at room temperature or placing the frozen pouch in warm water is definitely NOT recommended, as it can cause the salmon to lose flavor and texture. If you must thaw your salmon quickly, place the frozen pouch in a bowl of cool water for 30-45 minutes, and then continue thawing in refrigerator. 

 

COOKING 

Brush each thin-cut strip of Wild Alaskan Sockeye salmon with olive oil, then season with salt, pepper, garlic powder, and onion powder to your taste. Place strips on their side in a hot oiled pan stove top (we prefer cast iron or on a heated Himalayan Salt Brick) for several minutes. If using salt brick, follow brick instructions. Flip once. Remove from heat an serve. 

 

Himalayan Salt Brick

PREPARATION: Make sure the salt block is dry before heating or chilling.

TO CHILL: place in refrigerator or freezer for two hours or more.

HEATING: On gas stove or grill, slowly bring brick to desired temperature by heating on low for 15 minutes, then medium for another 15 minutes and high for 15 minutes (if necessary). It is NOT recommended to heat the block in the oven, microwave, or an electric coil. 

 

SALT BRICK TIPS & TRICKS

A high smoke point oil such as grapeseed or canola can be lightly brushed on block to prevent food sticking. Food releasing liquids hen cooked will create a brine and season faster. Foods prepared on a chilled block will impart salt faster and should be served immediately. Blocks may retain their temperature for more than an hour after removed from heat.

 

SALT BRICK CLEANING & CARE NOTES

Once fully cooled, scrape any food particles from block. The salt block is naturally antimicrobial and no soap is required. Lightly scrub with a soft brush or soap-free scouring pad. Briefly rinse with warm water and pat dry with paper towel or cloth. Do NOT submerge in water or place in dishwasher, as block will dissolve. Allow block to dry overnight and then store in ziplock bag or air-tight container.
